Let’s face it: eating the proper amount of vegetables isn’t always an appealing dining option, even though we know their health benefits. But New Orleans Fellow Meg Skizim sure knows how to make the likes of cauliflower, cabbage, and kale much more appetizing. As part of her Fellowship project, Skizim launched GrowingHealthyRoots.org, which showcases recipes based on the offerings from Hollygrove, a local urban farm and produce market. Growing Health Roots is part of Skizim’s social marketing campaign to encourage New Orleanians who receive food assistance to purchase more locally grown fruits and vegetables.
